Our Food Safety trainer, Nigel Braybrooke is passionate about anything to do with food or food safety. He served as a Petty officer (Catering) with the Royal Fleet Auxiliary before moving into Hospitality Management. He also spent some time as Food Production Manager at Southmead Hospital, Bristol.

Nigel became involved in Further Education as an Assistant College Lecturer in Food Safety and is well versed in making food safety training enjoyable as well as informative.

Food Safety

CIEH Level 2 Award – Food Safety in Catering

Course Objective foods - Acorn Health and Safety Training, Bristol - Food Hygiene TrainingThe participant will understand the importance of ensuring food remains free from contamination at all stages of food production – from farm to fork. They will also understand the role they play in maintaining high Food Safety standards within their operation.
Aimed At Anyone working in a situation where food is prepared, cooked
and served.
Content
  • Introduction to food safety
  • The law
  • Food safety hazards
  • Taking temperatures
  • Refrigeration, chilling and cold holding of food
  • Cooking, hot holding and re-heating of food
  • Food handlers and personal hygiene
  • Cleaning
  • Food premises, equipment and food pests
Outcome Participants will understand the importance of ensuring food remains free from contamination at all stages of food production and service.

On successful completion, 20 correct answers out of a 30 question, multiple choice question paper, the participant will receive a CIEH accredited certificate.
Duration 8 Hours (training contact time - 6 hours plus 1 hour allowed for multiple choice question paper)

Food Safety Awareness

Course Objective serving food - Acorn Health and Safety, Bristol -  Food Hygiene TrainingThe participants will gain a simple overview of Food Safety, before starting work in a food business or as part of an induction programme.
Aimed At Anyone who requires induction training before starting to work with
food, staff that handle food as part of their work activity e.g. waiting
staff, healthcare assistants, but whose job does not include the
preparation of high-risk foods, and those who wish to update their
food safety knowledge.

Our trainers are able to adapt the training to suit the particular working environment.

  • Food safety hazards and cross-contamination
  • The importance of temperature control
  • Food handlers and personal hygiene
  • Cleaning
  • Food premises, equipment and food pests
Outcome Participants will understand the importance of ensuring food remains
free from contamination at all stages of food production and service.

On successful completion a certificate of attendance will be issued.
