As Acorn Health & Safety Ltd’s food safety trainer, I am passionate about anything to do with food or food safety and make food safety training both informative and enjoyable.

Acorn is a Qualsafe Awards Training Centre, one of the largest Ofqual recognised Awarding Organisations in the UK, and as such are able to deliver their Level 2 Award in Food Safety in Catering.

Food handlers and their employers have a legal duty to manage food safety. These obligations are set out by a number of UK laws. These laws state that food handlers must make sure that food which is prepared, cooked, served or sold, is safe for human consumption. Failing to follow food safety standards can cause food to become contaminated with potentially fatal consequences. Food business operators are required by law, to ensure that food handlers receive appropriate supervision and instruction/training in food hygiene in line with their work activity and should enable them to handle food safely.

If you are responsible for developing and maintaining a business’s food safety management procedures, you must have received adequate training to enable you to do this. It is the discretion of the food business operator or environmental health officer (EHO) to decide which Food course is needed for you/your business. This may be a result of changes to legislation or technological developments in food hygiene.

Here at Acorn we offer 2 Food courses:

Level 2 Food Safety in Catering (FS01)

This one-day course is aimed at those working, or planning to work, in the catering industry where food is prepared and served.

During the course, Learners will build an understanding on the importance of safe food handling practices and keeping foods safe.

Topics covered include:

  • food safety laws
  • types of contamination and the associated risks,
  • bacteriology,
  • personal hygiene,
  • safe food handling practices
  • storage and temperature control and more….

Our customers’ businesses ultimately benefit from this training, which ensures they are compliant with both EU and UK Regulations, by having a good understanding of food safety practices which is essential in protecting the health of both consumers and food handlers.

By understanding the correct storage of foods this can also lead to less wastage and increase profits.

We frequently provide these courses at our training facility in Warmley, Bristol, and can also deliver the courses at customer’s premises, where suitable training facilities exist.

All course delegates are provided with a reference book to keep in which they can make notes relevant to the course content and their workplace, and will have the opportunity throughout to ask questions specific to their own employment situation.

The course is assessed using continuous formative assessment and an end of course theory assessment using a multiple choice question paper.

Food Safety Awareness Training (FS02)

We also offer this half-day course (3 hours) which is aimed at anyone who requires induction training before starting to work with food, staff who are low risk food handlers, and those who wish to update their food safety knowledge.

Our course programme employs a variety of training techniques to meet the needs of individual delegates and includes the following:

  • An introduction to food safety
  • The law governing food safety
  • Food safety hazards
  • Taking temperatures
  • Refrigeration, chilling and cold holding of food
  • Cooking, hot holding and re-heating of food
  • Food handlers and personal hygiene
  • Cleaning
  • Food premises, equipment and food pests

The course is assessed using continuous formative assessment and can be delivered at customer’s premises, where suitable training facilities exist.
